Meatloaf

While it sometimes isn’t regarded as anything special, a good meatloaf is hard to beat! It’s one of those foods that instantly takes you back to your childhood when you eat it. My meatloaf recipe results in a flavorful, filling, delicious dinner that anyone can cook and enjoy! Pro tip: you can substitute raw, quick oats for the panko bread crumbs to make this recipe gluten-free.

Meatloaf

1 lb ground pork

2 lb ground beef

1 c buttermilk

2 tsp thyme

2 tsp salt

1 tsp pepper

1 tbsp garlic, minced

1/2 c celery, finely chopped

1 c onion, finely chopped

1/2 c bell pepper, finely chopped

1 c panko bread crumbs

4 eggs

2 tbsp hot sauce

1 tbsp Worcestershire sauce

Method

Preheat oven to 350 degrees. In a large bowl, combine all ingredients. Gently fold them as to not overtax and make the meatloaf tough. Lightly press your meatloaf mixture into a lightly oiled pan, avoiding any air pockets. Bake for 40 minutes, glazing at the 30 minute mark. It’s important to let your meatloaf rest for around 30 minutes before you serve it to allow the juices to redistribute and settle within the meatloaf. Pro tip: thinly slice any leftovers, griddle them, and serve on toasted bread with white bbq sauce for the best meatloaf sandwich ever!

Glaze

1 c ketchup

1 tbsp sugar

1 tbsp red wine vinegar

Method

Mix all ingredients, and then glaze meatloaf evenly 10 minutes before it’s done cooking.
